South American Raisin Cake

These days we expect to find convenience foods right on our supermarket shelves - and they make our lives so much easier! The idea for this recipe came from a traditional South American favorite. We bet the originators would have loved today's shortcut ingredients!

What You'll Need

  • 1 1/4 cup apple juice
  • 1/2 cup sugar
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 2 tablespoons cornstarch
  • 3 (11-1/2 ounces each) packages refrigerated cinnamon rolls (8 rolls per package)

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13- inch glass baking pan with cooking spray. 

  2. In a medium-sized saucepan, over medium-high heat, combine apple juice, sugar, raisins, walnuts, and cornstarch. Bring mixture to a boil, then reduce heat to low and cook an additional 5 minutes or until mixture thickens.
     
  3. Meanwhile, cut each cinnamon roll into 6 pieces. Place half of pieces on bottom of prepared baking pan. Cover with raisin-nut mixture, then top with remaining dough pieces.
     
  4. Bake 25 to 30 minutes, until dough is firm and golden. Cool, then cut into serving-sized pieces.
     

Notes

For a sweeter touch, spread the icing from the cinnamon roll packages over the top just after removing the cake from the oven.
