Light 'n' Easy Ambrosia

Lower in fat than traditional ambrosia, but every bit as high in flavor. See if you agree with us!

What You'll Need

  • 1 (20 ounce) can pineapple chunks, drained
  • 1 (10 ounce) jar maraschino cherries, drained and halved
  • 2 cups miniature marshmallows
  • 1 cup low-fat vanilla yogurt
  • 1/2 cup flaked coconut

What to Do

  1. In a large bowl, combine all ingredients and toss until evenly coated with yogurt.
     
  2. Cover and chill at least 1 hour before serving.

Notes

This makes a super side dish or a nice, light dessert.

I make this with sour cream and add just a small amont of the pineaspple juice and also add can of mandarin oranges. I don't add 2 cups of the marshmellows because they are mostly sugar. It tastes great this way.

This is a family favorite at Thanksgiving, but I use crushed pineapples, mandarine oranges, a little sugar, chopped pecans, cream cheese instead of yogurt and cool whip.

You can also use Cool Whip in stead of the Yogurt and Mandarin oranges instead of the cherries!
