Is there a "secret ingredient" in your favorite meatloaf recipe? There is in ours! Our Secret Ingredient Meatloaf calls for one shortcut ingredient that doesn't just make life easier, but it makes the meatloaf so moist and flavorful, too! Aren't you glad we've let you in on our little secret?

What You'll Need

  • 1 1/2 pound ground beef
  • 1 egg
  • 1 cup chunky salsa
  • 1 cup coarsely crushed ranch-flavored tortilla chips
  • 1 cup (4 ounces) shredded Mexican cheese blend, divided
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
  2. In a large bowl, combine beef, egg, salsa, tortilla chips, 1/2 cup cheese, the chili powder, cumin, salt, and pepper; mix well. Place in loaf pan.
  3. Bake 55 to 60 minutes, or until no pink remains. Sprinkle remaining cheese over meatloaf and cook another 2 minutes, or until cheese is melted. Let stand 5 minutes, then slice and serve.

Notes

  • The perfect finish to a Tex-Mex themed dinner is a Tex-Mex dessert, like Fried Ice Cream!

Because this contains salsa and uses the Mexican blend cheese it is a Mexican style meatloaf. I have not tried it yet but it seems like a good spin on a classic. My kids like meatloaf a lot, so it would definitely be great to change it up sometimes.

I am looking forward to trying this recipe.

I was looking for meatloaf at my family would like and this one was a winner! All these flavors come together to make a nice Mexican meatloaf. It's not Bland. The sauce is a nice change from using ketchup and the cumin gives it a Mexican taste. I served it with refried beans and flour tortillas. Next time I'm going to make it with Mexican corn on the cob.

It goes well with mashed potatoes and gravy

Would ground turkey work in place of the beef?

Hi there! Ground turkey will work in place of the beef in this recipe. If you will be using ground turkey, be sure to increase the salt to 1 teaspoon, the black pepper to 1/2 teaspoon, and the chili powder to 2 teaspoons. Enjoy!

I have been using salsa for ever,in my meatloaf,but will try this one very soon,with the other ingredients.

I've never cared much for any meatloaf, but this one is definitely an exception! I only had plain tortilla chips, not the ranch, so I added a small amount of ranch dressing mix. Otherwise made exactly as stated. Awesome!

INTERESTING!! Never thought of using "salsa. But I have been making meat loaf FAR MORE MANY years than "salsa" has been around. I have LONG SINCE substituted "chili sauce" for ketchup though. NOW the next time I make meat loaf, OR meat pie, I DEFINITELY WILL TRY SALSA!

Not amusing..we know what she meant. Salsa was not in local stores or supermarkets back in the 30's thru 50's at least!

This is the best way I have made meat loaf yet. It was awesome great flavors and didn't fall apart. will definitely make again and again

This meatloaf is awesome and has a Tex Mex flavor, kind of like a taco salad. It is great as-is or with leaving the cumin out.

I used corn chips and no one in my family liked it. they are pretty fussy anyway but will be getting lots of leftovers.

I don't much care for ranch tortilla chips. Can I use corn chips instead?
