When you've got our Welcome Home Pot one-pot dinner simmering on the stove, the gang's gonna come home from school and work to an aroma that says, "Welcome home!"

What You'll Need

  • 1 3/4 cup beef broth
  • 4 pounds beef short ribs
  • 2 onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 red potatoes, quartered
  • 4 carrots, cut into 1-inch chunks
  • 2 (16-ounce) cans vegetarian baked beans
  • 1/3 cup pearled barley

What to Do

  1. In a 6-quart soup pot, combine broth, short ribs, onions, salt, and pepper; bring to a boil over high heat. Reduce heat to low, cover, and simmer 1-1/2 hours. Stir in remaining ingredients, cover, and simmer 40 to 45 minutes, or until meat and vegetables are fork-tender.
     
  2. Skim off fat; serve immediately.

Love this recipe. So easy and so good.

Remember, flavor comes from bones and carmelizing. I would start this recipe by browning the short ribs in 2 Tbls oil (I use sunflower) then continuing on as written.

This is an easy delicious recipe. Family loves it.

Does this freeze well?

This recipe can definitely be frozen with no problems! :)

I love beef and barley! Will definitely make this and have it simmering on the stove in the afternoon! Short ribs are hard to come by, I don't know why, so when I see them, I buy several and freeze them. They have a lot of flavor and make a good stock or gravy.

Love your videos, but for months they won't work for me after years of working. I'm a snowbird and bought a new computer and same thing on this one. 2 seconds of voice, then stop for 1 or 2 min. then another 2 seconds of voice. Why after years of OK is this happening. I miss seeing and hearing the video's, I get other video's.....

here in maryland, i have the same problem of no sound with the videos. other wmv files do play on my laptop. looking forward to making the welcome home pot.

Didn't like the barley. Tried it with short ribs and beef stew meat. Still tasty to rest of family.

To cut cooking time , cook all raw ingredients, along with the broth in a 5 quart pressure cooker at 10 pounds pressure for 10 minutes, take off heat, let cool to relieve the pressure, after pressure is off, run cool water over cooker, open lid, add remaining ingredients, leave lid off, place on burner bring to a simmer and simmer for 5 minutes. Very tender meat And veggies.

@bbacler3645803 Sure it can! Just adjust the cooking time. If you cook it on low, add maybe 1 hr to 1 1/2 hrs. and check for doneness around the 4 hour mark, then again every 30 minutes or so. However, if you work outside the home you could throw all the the ingredients in the crock (leaving out the beans and seasonings) (on low) before you leave in the morning. When you get home add the beans & seasonings and let them simmer while you unwind, or make the salad and dessert. Hopes this helps.

Could this be cooked in a slow cooker?
