You don't need hours to put together a dinner dish that looks and tastes fancy. With this recipe for Quick Chicken Marsala you can dress up your dinner plate and impress your taste buds too!

What You'll Need

  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 boneless, skinless chicken breast halves (1-1/2 to 2 pounds total), pounded to 1/4-inch thickness
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 1/2 pound fresh mushrooms, sliced
  • 3/4 cup Marsala wine

What to Do

  1. In a shallow dish, combine flour, salt, and pepper. Coat chicken with flour mixture; set aside.
     
  2. In a large skillet over medium heat, heat butter and oil. Cook chicken 5 to 7 minutes, or until browned, turning halfway through cooking. Remove cooked chicken to a platter and keep warm. (Cook chicken in batches, if necessary.) 
     
  3. Add mushrooms to skillet and saute 4 to 5 minutes, or until tender. Return chicken to skillet, add wine, and reduce heat to low. Cook 4 to 5 minutes, or until sauce thickens and chicken is heated through.

Notes

  • You're probably wondering why you need to saute in both olive oil and butter. Well, butter won't burn if it's mixed with oil, so that's how we can still enjoy its great flavor.

Great recipe. Only change I made was adding little chicken base omitting the salt. Do use a sweet Marsala.

Sweet Marsala, or dry Marsala?

We chose sweet Marsala for this recipe, but you can use either one! Enjoy :)

Good stuff! Used real onion & galic though.

Sorry, but onions and garlic -which I love- don't belong in chicken Marsala.

This sounds very good and I know I will try it. For the person who does not use wine maybe a cooking wine such as sold in supermarkets would do. I will personally use the wine but I always have on hand a variety of cooking wines.

Made this tonight and boy did my hubby love! He orders this often when we are at a restaurant..now I can make it at home! Very easy and cheap to make. My two little boys liked too. Thanks Mr. Food!

I read that cooking wine reduces the alcohol so you should be allright to cook with it unless you are allergic to wine like my daughter.

I do not use wine. What can I substitute in place of the wine? Thank yu!

Maybe you shouldn't make this dish, because the Marsala is what gives this dish it's unique taste.

THE name of this dish is MARSALA chicken which means it uses MARSALA wine you can use chicken broth in some cases instead of wine but the flavor of this dish will not be anywhere near the same

Why would you want to make a recipe in which Marsala wine is THE definitive ingredient, when you don't use wine? There are jillions of other chicken recipes out there which don't use wine.

If you would like, you can substitute chicken broth for the Marsala wine. However, the recipe will not taste like Chicken Marsala, since the Marsala wine is what give this recipe its signature flavor. Thank you for your question and enjoy!
