Happy Kids Macaroni and Cheese

This Happy Kids Macaroni and Cheese won't just make your kids happy, its rich and creamy taste will make everyone happy.

What You'll Need:
  • 1 pound elbow macaroni
  • 1/4 cup (½ stick) butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups milk
  • 4 cups (16 ounces) shredded sharp Cheddar cheese, divided
What To Do:
  1. Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with nonstick cooking spray.

  2. Cook macaroni according to package directions; drain. Place half in bottom of baking dish.

  3. In a medium saucepan, melt butter over medium heat. Add flour, salt, and pepper; stir to mix well. Gradually add milk; bring to a boil and cook until thickened, stirring constantly. Sprinkle 1-1/2 cups cheese over macaroni in baking dish and top with half the white sauce. Repeat layers once more then top with remaining 1 cup cheese.

  4. Bake 35 to 40 minutes, or until heated through and top is golden. Serve immediately.

Notes

This is sure to create smiles when you pack it in your kids' lunch thermoses. If they have it along with a cup of low-fat milk, they'll be well on their way to getting their daily calcium requirements.
