Baked Cheese Drops

Cheese, salsa, and beer all rolled into one...Baked Cheese Drops are just the thing to make for "drop"-in company!
What You'll Need
- 1 cup biscuit baking mix
- 1/2 cup (2 ounces) shredded Monterey Jack-pepper cheese
- 1/4 cup salsa
- 1/3 cup beer
What to Do
- Preheat oven to 450 degrees F. Coat a rimmed baking sheet with cooking spray.
- Combine all ingredients in a medium bowl; mix well then drop mixture by heaping teaspoonfuls onto prepared baking sheet.
- Bake 8 to 10 minutes, or until golden. Remove from oven and serve immediately.

Serve cheese drops with additional salsa for dipping.

These look really good. I'm partial to the Red Lobster Cheddar Bay biscuits or a good copycat, but I can easily see chowing down on a plate of these. I'm curious as to what beer is recommended to be used? I think this would work with a darker beer, but I'm open to experimenting with some lighter ones. I'd love to try incorporating a bit of sausage into this, since I think the result would be incredibly tasty. I normally use some stone ground mustard as a dipping sauce when I make sausage balls.

1/2 cup of cheese is 2 oz. because it is put into the measuring cup loosely not packed like flour would be

This sounds good, but it calls for a 1/2 cup of cheese, then says 2 ounces. A half-cup is 4 ounces. Which is correct?

Made these for a Saturday night "potluck" BBQ that we have every Saturday evening. They are a hit! My husband loves them. The only thing is, I doubled the recipe, used a teaspoon and only got 30 drops. No worries though...I made another batch so everyone could enjoy them. Love this recipe!

I like to use a slightly drained chunky salsa. A brick of pepperjack cheese so I can " chunky" grate it myself. The beer. Then I add chopped crisp bacon...., continue with the recipe. Yum!
