Queso Dip

In Mexico, practically everything is made con queso (with cheese). So what could be more authentic, satisfying, and simple than this Queso Dip?
What You'll Need
- 1 cup salsa
- 1 (4 ounces) can chopped green chilies, drained
- 4 cups (16 ounces) shredded Cheddar cheese
What to Do
- In a medium-sized saucepan, combine all ingredients and cook over medium heat 8 to 10 minutes, or until cheese is melted and smooth, stirring frequently. Serve immediately.

More and more in Mexico, this dip is now has hongos in it (Mushrooms). Either way it is very good. It is also quite a bit better if you can use one of the Mexican cheeses like Oaxaca, and some chirizo sausage, but then it becomes a fundido, so as a quick spicy dip, this is great.

To spice up add 1 pound of ground beef browned in garlic powder and onion powder.
