Kind of like a cross between a caramel apple and an apple crisp, these Caramel Apple Bars are sure to be a crowd-pleaser!

What You'll Need

  • 1/2 cup cold butter
  • 1 (17.5-ounce) pouch oatmeal cookie mix
  • 1 egg
  • 1 cup peeled and chopped apple
  • 3/4 cup caramel topping
  • 1/4 cup all-purpose flour

What to Do

  1. Heat oven to 350 degrees F. Coat 9- x 13-inch pan with cooking spray.
  2. In a large bowl, cut butter into cookie mix using a fork or a pastry blender. Stir in egg until mixture is crumbly. Reserve 1-1/2 cups of cookie mixture. Press remaining cookie mixture in bottom of prepared pan. Bake for 15 minutes.
  3. Sprinkle apple over the cookie crust. In a small bowl, mix caramel topping and flour, and drizzle over apples. Then crumble the reserved cookie mix over caramel layer and bake 20 to 25 minutes. Cool completely.

I made 2 batches, one in a glass 9x13 and one in a non-stick 9x13. I think the glass pan worked better. The crust in the non-stick pan was much darker and stuck to the pan. I would reduce the initial cook time of the crust when making them again in a non-stick pan. The cookie mix was sticky after adding the egg, which worked fine for pressing into the pan but was hard to crumble on top. I will try reserving part of the cookie mix with just the butter cut-in next time. I used 3 cups of chopped fresh apples. The apples still had some crunch to them giving it a caramel apple texture. I also used one jar of caramel topping in each pan but I don't think that is necessary.

Cookie mixes aren't available in this country - what can I use instead? (Actually this is a frequent problem with your recipes, they use pre-prepared things like refrigerator biscuits or frozen uncooked croissants/cinnamon rolls which are simply not sold here)

Unfortunately, we cannot determine if things are available outside of the US; however, for this recipe you can try substituting the cookie mix with a pancake/baking mix. Please let us know how this turns out for you!

I love apple and oats so this had to be a win win and would have been IF I would have gotten the caramel sauce, BUT I saved them with some Kraft caramels I had left over from last year, melted them in the microwave and added the flour and it worked perfectly. I did add more apples (2 cups) but I LOVE lots of apple and they were great!! I will make these again for my office party ! thanks for sharing.
