Lemon Crispies

Lemon desserts are lovely year-round, and so are quick and easy recipes. That's why our Lemon Crispies are a keeper. Use lemon pudding mix for a tart crunch and you'll have a crispy cookie in 10 minutes.
What You'll Need
- 3/4 cup shortening
- 1 cup sugar
- 3 large eggs
- 2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/8 teaspoon salt
- 2 (3.4-ounce) packages lemon instant pudding mix
What to Do
- Preheat the oven to 375 degrees. Beat shortening in a large bowl at medium speed of an electric beater until fluffy. Gradually add sugar, beating well. Add eggs, 1 at a time, beating well after each addition.
- Combine flour and remaining 3 ingredients in a medium bowl; gradually add to shortening mixture, beating well. Drop dough by rounded teaspoonfuls onto lightly greased cookie sheets. Bake 8 to 9 minutes or until lightly browned. Cool 1 minute on cookie sheets; transfer cookies to wire racks to cool completely.
