Potato Chip Cookies

We bet you won't be able to resist reaching for one of these melts-in-your-mouth Potato Chip Cookies. These buttery potato chip cookies have a slightly sweet and slightly salty taste that make them an absolute favorite!
What You'll Need
- 2 cups (4 sticks) butter, softened
- 1 cup sugar
- 3 1/4 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1 1/2 cups coarsely crushed potato chips
What to Do
- Preheat oven to 300 degrees F.
- In a large bowl, cream butter and sugar. Slowly add flour and vanilla until well blended. Stir in potato chips; mix well.
- Bake 20 to 22 minutes, or until light golden around edges. Let stand 5 minutes then remove to a wire rack to cool completely.

- If you’d like, after cooling, sprinkle the cookies with confectioners’ sugar or drizzle with melted chocolate. To make melted chocolate, in a small microwaveable bowl, simply melt 1/2 cup semi-sweet chocolate chips and 1 teaspoon vegetable shortening 45 to 60 seconds in the microwave, or until melted and smooth when stirred together.

I cut the sugar down to 3/4 cup and added some white chocolate chips. I love the taste! My only complaint is that they completely fall apart. We could not figure out how to eat them because they simply crumbled.

We made potato chip cookies in cub scouts years ago. They only contained chips, butter and sugar. If anyone has that recipe, I'd like it for my niece who has Celiac disease. Have tried to find it on-line before, but only find recipes with flour in them.

I agree with jd03jc, you can't please everyone. Perhaps the people looking for healthier recipes should go look at other recipes sites, such as diabetic recipes.com or low fat cooking recipes instead of trying to change this site. I love Mr.Food as is, & look forward to making these wonderful potato chip cookies sprinkled with chocolate. I do wonder about the flour amount though. It is sooooooo good!

Although the people that made comments about healthier recipes have valid points, it is not written anywhere that you have to use any of these recipes; you can very well substitute the butter with healthier alternatives as well as the sugar.

I made these cookies and the recipes says 300 deg. oven. After 22 minutes they weren't even close to being done. I checked other recipes on the internet and they all called for 350 deg. oven. Is this a typo?

Mr. Food, this comment is not only on this article, but on so many of the recipes that you offer. Most seem to be just loaded down with fats (unhealthy fats like butter, cheese, etc.) and SUGAR. Can't you start offering foods with olive oil and so much less sugar in them and food without all that cheese, cheese, cheese. I wonder, do you eat those foods? I don't want that kind of diet most of the time, and I surely don't want our kids and grandkids to eat like that. My mother taught me a long time ago (before most people realized about healthy diets) to cook healthy without all that fat, butter, bacon fat, margarine, cheese, other meat fat, and sugar. Could you please give us healthier recipies, especially in the dessert line. As is, my other cooking is done by boiling foods and taking off the fat, baking, and broiling. THANKS.

@ihosek, Since you obviously have experience using healthier cooking methods, it would have been great for you to share techniques with others to cut down on the fat/calories, rather questioning the site owner about whether he cooks these recipes.

ihosek I'll bet your kids and grandkids can't wait for dinner at your house! We are all aware of fat and sugar we know how to replace PART of butter with applesauce and Part of sugar with Splenda but it also comprimises the taste and texture simply type in diabetic recipes and low fat cooking in your search bar there are thousands of recipes for your liking Mr food also has a heart heatlthy section right here and I have a couple of recipes you may like Chop up some bolied skinless chicken breasts and sprinkle over salad greens can add fresh veggies like carrots broccoli cauliflower cucumbers & tomatoes of your choice drizzle with fat free sugar free dressing (Check label some have fruitose or corn syrup)For dessert sugar free fat free jello any flavor or maybe an apple or pear Can also make big pot of veggie soup... large can tomato juice or V8 juuice add head of chopped cabbage garic & onions you like fresh or frozen green beans maybe some broccoli or cauliflower add a couple bouillion cubes for flavor add a cup or 2 of water if too thick . simmer till done and enjoy HMMMMMMMMMMMMMM good IF any of us want diabetic or low fat recipes we would look for them elsewhere excpt for the heart heathy section at this site

Why is there never any nutritional information listed with the recipes? It makes life so much easier when the information is listed with each recipe. I don't like to print any without the info. I watch carbs and these look like there will be a lot of carbs in each cookie with all that butter, chips, and flour. Maybe tasty, but trouble on the carb factory. One cookie could be a whole meal. Please consider putting the info with all recipes. Love, love, love, Mr. Food. I have about 6 of your cookbooks and use them all the time, even though they don't have nutritional info in them either.
