Summer Ambrosia

Mix up Summer Ambrosia for a quick taste of the South. This Dixieland favorite tastes even better frozen!
What You'll Need
- 1 (14-ounce) can sweetened condensed (not evaporated) milk
- 1 cup sour cream
- 1/2 cup lime juice
- 1 (20-ounce) can pineapple chunks, well drained
- 1 (11-ounce) can mandarin orange segments, well drained
- 1 1/2 cups grape halves
- 1 cup sweetened flaked coconut
- 1 cup mini marshmallows
- 1/2 cup maraschino cherry halves, well drained (see Note)
What to Do
- In a large bowl, combine sweetened condensed milk, sour cream, and lime juice; mix well. Stir in remaining ingredients; mix until well combined.
- Cover and chill for at least 3 hours before serving.
Note
To prevent the cherries from "bleeding," I suggest stirring them into the mixture just before serving. And for a really refreshing dessert treat, try serving this frozen.

Ambrosia, my favorite. I do not know why I do not make this more often. The recipe is really easy to make and usually the day I make it to serve, there are no leftovers at the end of the day.

My mother would always serve Ambrosia when family came to town. It became a tradition and I really had not thought about Ambrosia until I came across this recipe. It really brought back some fond memories. I think I will save this recipe and purchase the ingredients and serve on Easter.

This is a pretty fruit salad with lots of colors and sweetness from the marshmallows. I make a lot of fruit "fluff" salads, but I have never used lime juice in my fruit salads. I do like limes, but I might also try using pineapple juice instead. This salad makes a great dessert.

The best way to keep the cherries from bleeding is to rinse the food coloring off of them. It doesn't take away from their taste and keeps your pear/pineapple salad, ambrosia or fruit platters neat.

Would anyone recommend fresh pineapple vs canned? Or does it need the juicyness of canned (drained, I know). Will try using fresh and let you know. Thanks everyone for making comments and suggestions for recipes on Mr. Food.

I haven't tried this yet, but I always made ambrosia using sour cream. I think that would have less fat and sugar and with the fruit and marshmallows, I always found it sweet enough. Maybe when I feel like splurging I will try your recipe. Susan
