I made this pesto sauce to go with the spiral potatoes, http// == tatoes, and it was really an upgrade on the potatoes, both on presentation and taste!

Make extra, freeze in ice cube trays, dump in a freezer bag, then pull out a few cubes as needed.

I love pesto and make it often. Mix with mayonnaise for a potato salad dressing. I also make it with baby spinach instead of basil. GOOD!!!
