What You'll Need
- 2 cups lightly packed fresh basil leaves
- 1 cup olive oil
- 1 cup grated Parmesan cheese
- 2 garlic cloves
- 1/2 cup pine nuts or walnuts
- 1/2 teaspoon salt
What to Do
- Combine all ingredients in a blender or food processor; blend until smooth. Use immediately, or cover and store in the refrigerator until ready to use.

I made this pesto sauce to go with the spiral potatoes, http//www.mrfood.com/Potatoes-Rice/Pesto-Spiral-Po == tatoes, and it was really an upgrade on the potatoes, both on presentation and taste!

I love pesto and make it often. Mix with mayonnaise for a potato salad dressing. I also make it with baby spinach instead of basil. GOOD!!!
