Vegetable Spread Triangles

Whether these are served at a reception with a refreshing fruity punch, or with a tall glass of iced tea, you know they'll be the talk of the get-together!

What You'll Need

  • 2 carrots, grated
  • 1 cucumber, peeled, grated, drained
  • 1 small onion, grated
  • 1 (8-ounce) package cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 6 (6-inch) pita breads

What to Do

  1. Preheat broiler. In a medium-sized bowl, combine all ingredients except pita bread; mix well.
     
  2. Spread cream cheese mixture evenly over top of each pita bread and place on rimmed baking sheets.
     
  3. Broil sandwiches 2 to 3 minutes, or until heated through.
     
  4. Remove from broiler and cut each pita into 8 wedges. Serve warm.
