One-Pan Banana Bread

Direct from Hawaii, our One-Pan Banana Bread is a yummy banana-nut bread made in just one pan!

What You'll Need

  • 1/3 cup vegetable oil
  • 1 1/2 cup mashed ripe banana (about 4 medium-sized bananas)
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • 2 1/3 cups biscuit baking mix
  • 1 cup sugar
  • 1/2 cup chopped walnuts

What to Do

  1. Preheat oven to 350 degrees F. Generously grease bottom of a 9- x 5-inch loaf pan.
     
  2. Place all ingredients in prepared pan and stir with a fork until moistened; beat vigorously for 1 minute.
     
  3. Bake 55 to 65 minutes, or until a toothpick inserted in center comes out clean.
     
  4. Cool 5 minutes. Run a knife or metal spatula around sides of loaf, pressing gently to loosen, and remove loaf from pan. Cool slightly before slicing.

Has anyone tried reducing the amount of sugar? If so was it sweet enough? One cup sounds like it would be too sweet.

Hi there! If you like, you can reduce the amount of sugar in this recipe to 1/2 cup, however, the Test Kitchen recommends using very ripe bananas to ensure that this recipe comes out sweet. :) Enjoy!

By Biscuit Mix, do you all mean Scone Mix? Here in Australia, biscuits are like your cookies..

Hello! Unfortunately, we're not sure if the scone mix would work, since we're not aware of what ingredients the scone mix may contain in Australia. However, if there is any sort of pancake and waffle baking mix in your area, this would work. We hope this helps!

Bisquick or Jiffy baking mix are primarily a biscuit mix,but can be used for any recipe that you want to interchange them. Works great! Super good pancakes also! Just my 2 cents worth. Hope this helped.

Just made this using Jiffy Baking Mix. This has to be the best Banana Nut Bread I've ever made, and I've made alot. Very moist!
