OMG, this is a keeper! Being on Weight Watchers, I used light sour cream and sugar free jello. Amazing results. So moist, doesn't need any frosting, but the powdered sugar dusting on top does add to the appearance.

To Moopsee or anyone else with the answer-Are you suppose to melt 8oz of cream cheese and add it to the cake instead of the gelatin mix?

you can use any flavor of gelatin to have more to select from, how cool is that?

This was called "Ruby Slipper Cake" when I was growing up. Raspberry gelatin mix was used. Putting some nuts in a strudel topping first before the batter made it need nothing with it. Absolute favorite as a kiddo -- because I could make it at a young age. A "cheesecake" layer in it would work in answer to cajungabby2000... but I wouldn't mix it with the gelatin mix.
