Simple Snack Cake

Are you one of those people who see cake as a way of getting more frosting into your mouth? If so, then you're going to love our Simple Snack Cake. This snack cake is moist and lightly flavored, making it great for experimenting with all of your favorite frosting recipes!
What You'll Need
- 1 cup (2 sticks) butter
- 1 cup water
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 eggs, beaten
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- 1/4 teaspoon baking soda
- See Notes for frosting options.
What to Do
- Preheat oven to 375 degrees F. Coat a 10- x 15-inch baking pan with cooking spray.
- In a large saucepan over medium heat, bring 1 cup butter and water to a boil. Remove from heat; stir in flour, granulated sugar, eggs, sour cream, salt, baking powder, vanilla, and baking soda until smooth. Pour into prepared pan.
- Bake 20 to 25 minutes, or until golden brown and a toothpick inserted near center comes out clean. Cool on a wire rack.

Hello! Thank you for your comment. The baking sheet vs baking pan was a mistake on our part. This recipe calls for a baking pan. We have also edited the amount of salt in this recipe down to 1/2 teaspoon. We hope this was helpful!

Never seen a 10x15...can this be done in a 9x13??

Hello! A 10 x 15 baking sheet seems to be the standard sized baking sheet in most households. The test kitchen has never used a 9 x 13 baking sheet for this recipe because the cake is very dense and benefits from the larger pan. If you do decide to try this in a 9 x 13 please let us know how it turns out! Thank you. :)

I haven't heard of a snack cake in years! It probably goes back to the days when it was ok to have a small piece of cake for a snack. This cake looks easy to make, and delicious, without being over the top with sugary ingredients. I'll enjoy my snack cake with a cup of coffee.
