Chicken a la King

Chicken a la King is a classic recipe that has stood the test of time. Our easy version of this saucy chicken favorite goes from prep to your table in under 30 minutes.
What You'll Need
- 8 tablespoons (1 stick) butter, divided
- 1 1/2 pound boneless, skinless chicken breasts, cut into 1/2-inch chunks
- 1/2 pound fresh mushrooms, cut into quarters
- 6 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 3/4 cup chicken broth
- 1 cup (1/2 pint) heavy cream
- 1/2 green bell pepper, diced
- 1 (2-ounce) jar chopped pimientos, drained
What to Do
- In a large skillet, melt 2 tablespoons butter over medium-high heat.
- Saute chicken 5 to 6 minutes, or until no pink remains. Remove chicken from skillet; drain and set aside.
- Add remaining 6 tablespoons butter, the flour, salt, and black pepper to skillet, whisking constantly until butter melts. Slowly add chicken broth and cream, and bring to a boil, whisking until smooth and thickened.
- Reduce heat to medium-low, return chicken to skillet, and add remaining ingredients. Simmer until heated through, stirring constantly.

I have made this recipe, as is, and then the 2nd time I added cream cheese based on a former recipe for Chicken A La King that I had. I like it even better with the cream cheese added. All in all, this is a very good basic recipe. I also like to add frozen green peas and serve in a pastry shell as jackie2830 did.

I added a chopped onion and some minced garlic when I sauted the chicken. I also used salted butter so I will definitely cut the salt down from the 1 tsp to 1 half tsp the next time I make this recipe. I had never made Chicken A La King before but this recipe was EASY and so freaking AWESOME! I will DEFINITELY make it again!! =D

I like your upgrades! I put onion and garlic into practically all my savory dishes! How thick is this sauce/gravy? In the picture it looks a little too thick for me. I might have to think it with milk or cream.

Excellent! The only thing I left out was the green pepper. Also I simmered a whole chicken, deboned and used all the meat [white and dark] and used the broth for the recipe. I doubled the recipe so I could freeze half for another meal. We put the ala king over freshly baked puff pastry shells and served sweet peas and cranberry sauce on the side. My hubby and I loved it!
