The easy homemade seasoning mix that makes our Herbed Chicken so flavorful, is a cinch to prepare. With the bonus of this being a main dish make-ahead, you can't go wrong.

What You'll Need

  • 1/2 cup all-purpose flour
  • 1/2 cup fine, dry bread crumbs
  • 1 teaspoon paprika
  • 1/4 teaspoon ground thyme
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 three- to four-pound chicken, cut into 8 pieces
  • 1/4 cup (1/2 stick) butter, melted
  • 1 tablespoon vegetable oil

What to Do

  1. Preheat the oven to 400 degree F.

  2. In a plastic or paper bag, combine the flour, bread crumbs, and seasonings, shaking to mix well.

  3. Add 2 or 3 chicken pieces to the bag; shake to coat completely. Repeat with remaining chicken.

  4. Pour the melted butter and oil into a 9" x 13" baking dish; add the chicken pieces. Bake, uncovered, for 30 minutes.

  5. Reduce the oven temperature to 350 degree F., turn the chicken pieces, and bake for 20 to 25 more minutes, or until cooked through and tender.
