Pecan-Breaded Chicken with Cranberry Sauce

Orange and honey-glazed chicken breasts with a crunchy pecan breading are a perfect match for cranberry sauce, indeed!

What You'll Need

  • 2 chicken breasts, split, skinned, and boned
  • 1/2 cup pecan pieces, finely chopped
  • 1/3 cup seasoned bread crumbs
  • 1 teaspoon grated orange peel
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 cup honey
  • 1 tablespoon orange juice
  • 1 can (16 ounces) whole berry cranberry sauce

What to Do

  1. Preheat the oven to 350�F.

  2. Place the chicken in a shallow dish. In another shallow dish, mix together the pecans, bread crumbs, orange peel, salt, and paprika.

  3. In a small bowl, combine the honey and orange juice. Lightly spread the honey mixture over the chicken pieces; place the chicken in the crumb mixture, turning to coat on all sides. Arrange the chicken in a 9" x 13" baking dish that has been coated with nonstick vegetable spray.

  4. Bake for 35 to 45 minutes or until the chicken is fork tender and no pink remains. Top each serving with a small amount of cranberry sauce; serve with the remaining cranberry sauce.
