Southern Breakfast Scramble

What You'll Need
- 2 tablespoons butter
- 2 cups chopped collard greens
- 2 plum tomatoes, chopped
- 1 cup cooked sausage crumbles
- 8 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded sharp Cheddar cheese
What to Do
- In a large skillet, melt butter over medium-high heat. Add collard greens, tomatoes, and sausage and cook 4 to 5 minutes, or until vegetables are tender.
- In a large bowl, whisk together eggs, salt, and pepper. Add mixture to skillet; cook without stirring until eggs begin to set on bottom. Stir egg mixture gently to form large pieces. Sprinkle with cheese and continue to cook until eggs are firm. Serve immediately.

This is good recipe as is, but the next time I fix it I did change some of the ingredients. Instead of collard I use fresh spinach, Instead sausage/ cooked ground beef, saute fresh mushrooms and onions instead of tomatoes and the cheese a Italian blend Then grated Parmesan cheese. Then you have a Original Joe Breakfast Scramble, both are good

To: viewcam6768 & gedman9652 0989984 :O and whoever Please take this us a fun reply OK; I keep the tablespoon butter, eggs, salt, black pepper but forgot to add Worcestershire Sauce and Cholula Hot Sauce to taste to my list. Hope you try and enjoy.:) I love this web site GREAT RECIPES with normal ingredients and you can add your own things and gives you a guideline for your own ideas:D
