If one is not going to serve this immediately but make ahead and put in a storage container for freezine and serving later, must the bananas be frozen before putting into a food processor or can you use unfrozen bananas? In addition, what are the chunks I am seeing in the photo of this dessert? Thanks.

Hello! Definitely freeze your bananas first, before processing. This will give it a better consistency. The chunks in this photo are chopped peanuts. It makes a great addition to this dessert, but you can top with any of your favorites!

Do you start with frozen bananas?

Hi Mona! Yes, you would start with frozen bananas. Enjoy!

PLEASE start including the NI for each recipe so we can see just how 'healthy' it is.

I have been wanting that too. They have it on the Diabetic recipes, some at least..

For this particular recipe I would not think it would be difficult to obtain the NI for one banana and likewise for one tbsp. of honey and then just multiply by 3. The NI for the lemon juice would not be worth mentioning.

once frozen should I defrost for serving or serve it the consistency of ice cream?

I've made this often. You leave it frozen, so it's like ice cream...
