Remeber how all the kids in the neighborhood would run home for change when the ice cream truck came by ringing its bell? This is an easy way to make those all-time favorite Nutty Sundae Cones we all would choose from the truck!

What You'll Need

  • 1 cup chopped salted peanuts, divided
  • 12 five-ounce paper cups
  • 1 cup (6 ounces) semisweet chocolate chips
  • 2 tablespoons vegetable shortening
  • 1 quart vanilla ice cream
  • 12 sugar cones

What to Do

  1. Place 1 teaspoon peanuts into each paper cup. In a medium-sized microwave-safe bowl, microwave the chocolate chips and shrtening at 90% power for 1 minute; stir until smooth and completely melted. Microwave at additional 10-second intervals, if necessary.
  2. Stir the remaining peanuts into the melted chocolate. Spoon about 2 teaspoons of the mixture into each cup, or enough for the mixture to coat halfway up the sides of each cup.
  3. One at a time, place a scoop of vanilla ice cream into each cone, and invert the cones into the cups, pressing the ice cream into the chocolate mixture. Freeze the cones in the cups for 3 to 4 hours. When ready to serve, simply peel off the paper cups.

Herb Crusted Lamb with Mint Sauce

Instead of cooking ham or prime rib for Easter, why not try something new this year? Our Herb-Crusted Lamb with Mint Sauce may look and sound fancy, but it's really easy to do. It's basically a rack of lamb that's coated with herbs and spices before it's roasted to perfection. Just before serving, it's finished off with a mint-wine reduction. The end result is an Easter-worthy main dish that'll impress everyone at the table.
