You know those desserts that are so good that you HAVE to share 'em? Well, here's one for ya! This Refrigerator Blueberry Pie is D-E-L-I-C-I-O-U-S for you and those around your table!

What You'll Need

  • 4 cups fresh blueberries, divided
  • 1 cup sugar
  • 3/4 cup hot water
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1 baked 9-inch pie crust
  • Sweetened whipped cream

What to Do

  1. Combine 1 cup blueberries, the sugar, and next 4 ingredients in a saucepan. Cook over medium-high heat until mixture thickens, stirring constantly.

  2. Add remaining 3 cups blueberries and the lemon juice; stir gently. Spoon into pie crust; cover and chill 1 hour or until set. Serve pie with sweetened whipped cream.

Notes

  • Want to "perk" up plain coffee? Add a cinnamon stick or vanilla bean to the coffeemaker basket. Stand by for fantastic flavor and aroma!

Sounds delicious! Will make it soon. How much Stevia shold i use to replace the sugar? Also to answer another person's about replacing cornstrarch, I always used, as my mother did, minute tapicoa istead of cornstarch for all fruit pies. It does not taste like tapicoa and is clear. The graham cracker crust soulds ike a great idea as well.

It's a refrigerator Blueberry Pie. The directions calls for 1 baked pie crust. Hope this helps.

How does the crust get baked if this is a no bake recipe as your e-mail states.

Buy a pre-made one

I would recommend using a store-bought graham cracker crust.
