Creamy Pumpkin Mousse

For a lighter way to enjoy the flavors of Fall, try our Creamy Pumpkin Mousse! This mousse has just the right amount of spiced pumpkin flavoring and creamy texture to satisfy your sweet tooth!

What You'll Need

  • 1 (15-ounce) can 100% pure pumpkin (not pie filling)
  • 1 (6-serving) package instant vanilla pudding mix
  • 1/4 cup low-fat (1%) milk
  • 1 teaspoon ground cinnamon
  • 2 cups frozen whipped topping, thawed

What to Do

  1. In a medium bowl, with an electric beater on medium speed, beat pumpkin, pudding mix, milk, and cinnamon until well blended.
     
  2. Fold in whipped topping until thoroughly blended then spoon into a serving bowl or individual dessert glasses. Cover loosely and chill until ready to serve.

This recipe is good with butterscotch pudding, too!

This recipe is fantastic for my diabetic relatives! I used it as pie filling, putting it into a graham cracker crust, spreading the left-over (sugar-free) topping on top. I freeze the pie, then defrost in the fridge the day I want to serve it! Fantastic!

My husband LOVES this. We call it pudding, but mousse is much more descriptive, I use a can of evaporated milk, regular, fat-free, or 2%, all work to make it even creamier. Chill the bowl, beaters, pumpkin and milk well first. Don't need the whipped topping then. If you like pumpkin pie, add some ginger and cloves, just a pinch. Its fun-tastic ! A little blop of topping and a candy corn, adorable !
