Blueberry Vinaigrette

Shake things up with a homemade salad dressing brimming with the fresh taste of blueberries. They're on produce counters and in the freezer section at the supermarket. Let Blueberry Vinaigrette brighten your day!
What You'll Need
- 1 cup fresh or frozen blueberries, thawed, divided
- 1/4 cup vegetable oil
- 2 tablespoons orange marmalade
- 2 teaspoons lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
What to Do
- In a blender container, combine half the blueberries with the remaining ingredients; blend until a smooth, thick dressing forms.
- Drizzle dressing over salad and sprinkle with remaining blueberries.

Just made this in my bullet. Used EVOO, apricot preserves and frozen wild blueberries. Tasted yummy.
