Breakfast Rollups

No need to spend a lot of hard-earned cash to impress company for brunch! This simple recipe for colorful and flavorful tortilla roll-ups uses fillings we already have on hand. The result is priceless good taste!
What You'll Need
- 4 (6-inch) flour tortillas
- 8 tablespoons whipped cream cheese
- 4 leaves green leaf lettuce
- 4 (1-ounce) slices deli ham
What to Do
- Place tortillas on individual pieces of wax paper. Spread 2 tablespoons cream cheese over each tortilla.
- Top each with 1 lettuce leaf and a slice of ham then roll-up jelly roll-style. Roll in wax paper and keep chilled.
- When ready to serve, slice and remove wax paper.

I'm not sure that I'd make these for breakfast. They sound like a great bring-along for lunch! I'd love a fresh snack like this in the middle of the day.

I use this for lunch, great to take to work. My friends now ask me to bring some for them as well. I put extra lettuce in and vary the meat with turkey/chicken and sometimes add broccoli slaw....YUMMIES

Oh my, I don't know what all the fuss is about 'American Beauty' remark because it isn't showing on my screen. Wouldn't this be more for a lunch than a breakfast roll-up? That being said I think the recipe sounds great. If you want a little more fiber you could use a whole wheat tortilla, after all this is the type of recipe that is really just a starting point. Can't wait to try it.

Now that I got my rant off my chest, I'd like to comment on this recipe method. This is a basic method that can be turned into so much in so many ways - as an appetizer - all the way to a dessert. My basic one is spreadable cream cheese that has diced green onion, jalapeno & black olives blended in with it - along with some pepper flakes depending on the crowd. I use this as a base, and will roll the tortillas and slice with these ingredients alone served with a side of salsa. For a heartier plate, I will line the cream cheese after it is spread on the tortilla with a thin shaved luncheon meat of your choice. This just travels too well and sets out on a buffet well w/o worry of spoilage depending on what you add. You can use a sweetened cream cheese and fruit for a dessert. If you are worried about calories - eat the damn salad...but make sure you leave off the dressing...don't have a cocktail, wear a girdle, and a dress you never did fit in - and plaster a fake smile on your kisser lookin like you're havin a good time.

Another wonderfiul idea for an easy but elegant breakfast Mr. Food has so many wonderful yet easy ideas ! I really enjoy this site .. can also warm an unwrapped block of 8 ounce cream cheese & mix with 1/2 package ranch dressing instead of using the expensive whipped cream cheese can use any kind if lettuce I have lettuce & spinach growing in my garden

Americanbeauty, There is no need in your remarks. If you think he is in it for the money then everyone on Foodnet is also. Some people cook nothing but healthy others cook like most people eat. It is your choice to pick. Frankly I think before long they are going to find out that half the healthy food people are eating is wrong and causing problems. Nothing is perfect. Sounds like a very slick, quick, make-ahead (always a bonus) to a breakfast buffet or a side with scrambled eggs....neat-o idea....might add a little mustard or salsa for a bit of a bit...(gets the metabolism going first thing!)

This recipe is not not exactly new. I've been making these for years for brunches, pot lucks, breakfast, etc. I use raw spinach leaves, stems removed, instead of lettuce since lettuce has almost no nutritional value. Instead of plain whipped cream cheese, I like using the pineapple flavored cream cheese with the ham to give it a Hawaiian flavor. You can mix and match any meat/spread combination to please your crowd.

These recipes are submitted by people like you and me. It is easy to adjust the ingredients so that they are healthy Use whole wheat or low fat tortillas, fat free cream cheese and your deli sells 98% fat free ham or turkey. They will in fact print a sheet for you showing the infor on the meat. Also there are hundreds of programs on the internet to help you figure out the nutrional value and they are free.

American Beauty...why do you even come to this website for recipes if all you can do is make negative comments on both the recipes and the host? There are plenty of other recipe websites out there, including those that are all "lite". Recipes are personal tastes and are up for critique and revision by everyone, but your comments about the man were tacky, rude, and uncalled for.
