Egg Noodle Vegetable Chowder

When they ask for seconds (and maybe even thirds) of this pasta soup, you'll be glad to give it to them, 'cause you'll know it's loaded with lots of good things.

What You'll Need

  • 1/2 pound egg noodles
  • 1 cup diagonally sliced celery
  • 1 small yellow squash, thinly sliced
  • 1 cup fresh broccoli florets
  • 1/2 cup thinly sliced red onion
  • 2 1/2 cups milk
  • 2 (10-1/2-ounce) cans condensed chicken broth
  • 2 cups (8 ounces) shredded Cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

What to Do

  1. In a large pot of boiling salted water, cook noodles to desired doneness; drain and set aside.
     
  2. Meanwhile, in a large saucepan, combine vegetables, milk, and chicken broth. Cover and bring to just under a boil. Reduce heat and simmer 15 minutes.
     
  3. Stir in Cheddar cheese, salt and pepper.
     
  4. Add noodles to vegetable mixture. Simmer about 5 minutes or until thoroughly heated.

I tried this, not bad, but I added carrots and califlower. First time I ever used squash, i'm still on the fence with it. Next time I might even add some green beans to it! Nice way to use up veggies and we all know its better with noodles lol thanx again for making me look & think I can cook ;-)

How about putting Nuttritional Info on your recipies? Very helpful that would be.

Is there a way to substitute vegetable broth to make this chowder vegetarian? If so, what would make it "condensed" vegetable broth?

Since we are not aware of a condensed vegetable broth on the market, here are a couple of suggestions. You can use vegetable base and add to vegetable broth to give it a more concentrated flavor. Or use the vegetable base with water and add more base than you would to make broth to make the flavor more concentrated. Thank you for your question!

I can't find condensed chicken broth in my store. How do I change consistency using regular chicken broth?

I would personally add two cubes or spoonfulls of dry chicken powder... hope this helps

Condensed chichen broth should be in the soup section. Campbell's Soup has some.
