Sometimes the simplest things are the best, like carrots glazed with honey. Why not make our Citrus Honey Carrots and add a twist of lime zest for a nice touch of holiday green?

What You'll Need

  • 2 tablespoons butter
  • 1/4 cup honey
  • 2 (14.5-ounce) cans whole baby carrots, drained
  • 1 teaspoon grated lime peel

What to Do

  1. Melt butter in a large skillet over medium-high heat. Add honey, and cook 1 to 2 minutes, or until sauce has thickened, stirring frequently.
     
  2. Add carrots and lime peel, and saute 1 to 2 minutes, or until heated through and well coated with sauce. Serve immediately.

Notes

  • For extra zest, grate a bit of additional lime peel over the top just before serving.
     
  • We are carrot lovers around here, so we like to whip up a batch of Carrot and Parsnip Soup to have on hand. It tastes great and feels so good going down!

I use fresh carrots in my recipe but I love roasted carrots and they always come out so good, either sweet or savory. Thanks for the recipes like this. Sweet potatoes roasted savory are wonderful too.

I love the idea of citrus with glazed carrots. I'm thinking a little fresh squeezed orange juice with it, too.

Sounds different. I might want to try.

Um...shouldn't an ingredient be some sort of CITRUS? Maybe squeeze the lime juice into the carrots...dunno..just seems silly to name a recipe CITRUS Honey Carrots, when the only CITRUS is the lime zest (which is the peeling only)...Just my opinion.. :)

it's called Citrus cause if you really read the recpie it uses lime zest! But the juice would probally be good too

Delicious!!!! And so so easy to make. Our granddaughter won't normally eat carrots, but these, she couldn't get enough of. A for sure must try!!!!

we love carrots. So this a really good idea. This will be on our table. I'm going to add a squeeze of the line juice.
