Fiery Zucchini Fries

Fiery Zucchini Fries

Your gang will love these spicy hot baked zucchini fries. We bet they won't even care that they're eating healthy vegetables!

What You'll Need

  • 3 medium-sized zucchini (about 1 pound total)
  • 1 1/2 cups crushed nacho-flavored chips
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 eggs
  • Cooking spray

What to Do

  1. Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray; set aside.
     
  2. Cut each zucchini in half crosswise then cut each half lengthwise into french-fry-like strips.
     
  3. Place the chips, garlic powder, salt, and cayenne in a shallow dish; mix well. In another shallow dish, whisk the eggs. Coat each zucchini strip in the egg mixture and coat completely with the chip mixture; place on prepared baking sheet.
     
  4. Spray fries with cooking spray and bake 15 minutes, or until crispy. Serve immediately.

Note

Serve Fiery Zucchini Fries with your favorite dipping sauce.

If you put a wire rack like a cooling rack on or in a cooking sheet pan it will make what you are cooking crispy on both sides without turn them

I have tried this recipe before, and have used the cooling rack on the cookie sheet. Great idea. If I don not have chips, I just use cracker crumbs. Not as "hot" however suits my taste. Love this web site!!

Thanks for that tip! Yes, I would like my zucchini fries crispy on both sides! Who wouldn't! lol And since they're so delicate, not having to turn them is going to help hold their shape until crispy and firm. I make my own buttermilk ranch dip that I'll use for these. It's what they served at Logan's steakhouse and the two went together great.
