Tex Mex Mini Pizzas

With these individual pizzas you get half the amount of cheese as regular pizza, but you still get the full-bodied flavor, 'cause the salsa and beans really pack a punch!

What You'll Need

  • 4 (8-inch) flour tortillas
  • Cooking spray
  • 1 cup salsa
  • 1 (16 ounce) can black beans, rinsed and drained
  • 1 cup (4 ounces) shredded Cheddar cheese

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. Spray both sides of tortillas lightly with cooking spray and place on a rimmed baking sheet. Bake 10 to 12 minutes, or until crisp, turning once halfway through heating.
     
  3. Remove from oven and layer evenly with salsa, beans, and cheese. Return to oven and bake 5 minutes, or until cheese is melted and hot. Cut each into 4 wedges and serve.

Notes

If you want to cut back on fat even more, use 1/2 cup regular Cheddar cheese and 1/2 cup reduced-fat Cheddar cheese.
