All in One Carrot Cake

There's something sinfully delightful about having your cake and eating it, too! Carrot cake is chock-full of good-for-you ingredients, along with a few sweet surprises. Our easy-to-make All in One Carrot Cake will let you enjoy them all.
What You'll Need
- 2 cups sugar
- 1 1/2 cup vegetable oil
- 4 eggs
- 2 teaspoons baking soda
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 cup flaked coconut
- 2 cups (about 1 pound) grated carrots
- 1 cup chopped walnuts
- 1 (16-ounce) container cream cheese frosting
What to Do
- Preheat oven to 350 degrees F. Coat a Bundt pan with cooking spray.
- In a large bowl, combine all ingredients except frosting; blend with an electric beater until a smooth, thick batter forms. Pour batter evenly into Bundt pan.
- Bake 40 to 45 minutes, or until top and sides are golden, and a toothpick inserted in center comes out clean.
- Let cool completely then cover with cream cheese frosting.
NOTE: To give this a light drizzle instead of covering it with frosting, remove foil seal on paper container of frosting and microwave the container for 30 to 60 seconds, or until pourable. Using a fork, drizzle frosting over cake.

I made this cake yesterday. I didn't like the fact that cinnamon was the only spice used for flavoring so I added clove, cardamom and nutmeg. I also added more sugar and salt than the recipe called for. The cake turned out fabulously rich and flavorful. It had a very moist and dense texture which I like. I used a cake pan instead of a bundt pan and the only complain I guess would be that the cake was a bit concave in the middle. I covered it with a cream cheese frosting tho so you couldn't even tell. I should note that I live over 5,000 feet in the mountains and needed to add another 10 minutes to my baking time. I will totally make this recipe again with my same modifications.

i made this all in one carot cake twice and my husband keeps asking fo it. Never we had a carrot cake so good.

This cake was awesome. I think it would also be good if you added a bit of pinneapple in it.

Yes, it sounds delicious... BUT the amount of oil is too much... I made it - greasy! I will try it again with less oil, maybe half oil - half apple sauce. Sucralose... GOOD GRIEF NO use STEVIA!!!

This cake sounds delicious (especially since we've been DIETING!!) Carrot cake is my fave...I'm gonna try it in a month or so using sucralose ("Splenda"), low trans oil, and use the "drizzle" of frosting noted at the bottom of the recipe. I'll add the raisins (soaked first in Evan Williams bourbon and drained, dusted with flour), and pineapple (in its own juice, drained) as reviewers recommended. I' ll TRY to slice it real thin and freeze half for another time! (Good luck with that! Ha!)

I always like to add raisins to my carrot cakes. Soak them in warm liguid first (can be water, juice or brandy), drain them and dust with flour so they do not all sink to the bottom of the cake. Yumm>

I will add a small can of dole crushed pineapple, well drained. It's the only thing missing.
