Fruit Filled Coffee Cake

This is a secret Amish recipe for a Fruit Filled Coffee Cake that is simply incomparable. With swirls of cherry pie filling running through every heavenly bite, this is no ordinary coffee cake.
What You'll Need
- 3 eggs
- 1 1/2 cup plus 3 tablespoons sugar, divided
- 3/4 cup vegetable oil
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1 (21-ounce) can cherry or your favorite pie filling
- 1 teaspoon ground cinnamon
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large bowl, cream together eggs, 1-1/2 cups sugar, the oil, juice, and vanilla. Add flour and baking powder; mix well. Pour half the batter into prepared baking dish. Spread pie filling over batter.
- In a small bowl, mix remaining sugar and the cinnamon; sprinkle 1 teaspoon of the mixture over pie filling.
- Spoon remaining batter over pie filling then sprinkle with remaining sugar and cinnamon mixture.
- Bake 15 minutes then reduce heat to 300 degrees and bake 60 more minutes, or until toothpick inserted in center comes out clean.

It was okay. I don't know if the cake could handle it structurally, but a second can of pie filling would help enormously.

Too bad i can't edit my comment as I would change my rating to 4 stars. The cake was more moist the second day. I believe that over time the cake absorbed more of the pie filling.

That's an awful lot of oil. Can you substitute apple sauce for any amount of it?

Hi there! While the Test Kitchen has not made this recipe using applesauce as a substitute for vegetable oil, we do think that it is an equivalent substitution. We recommend cutting the oil in half and using apple sauce. Let us know how this turns out for you. Enjoy!

What can I use instead of the orange juice? I don't want to have to buy a whole carton of it for just 1/4 cup. I don't drink OJ.

I have made this and it is so good. I use apple pie filling as my family doesn't like the cherry. It is easy to make, easy to serve and easy to store.

Well......All I can say about this cake is that if I was a member of the Catholic faith, I would now know what I was going to give up for Lent. This was awful. Cake was very dry, what flavor it did have was from all the oil. Will not be making this one again.

Cake was very good but baking time was more like 40 - 45 min not the 60 called for after decreasing temp. Have newer gas oven.

Wonderful recipe It is delicious... IF you do not know how to follow directions or handle a simple thicker type batter,Please do not try baking from scratch and stick to cake mixes out of the box I have been baking over 50 years Since when did recipes have to have warnings about the textures and thickness of batters? There are all kinds of batters with varying textures These directions are plain direct Quick and easy too! Thank you Mr Food staff... Keep'em coming!

The batter is very thick. I pat it out with a gloved hand and add the pie filling leaving a one inch border around the edge. I gently pat the top batter trying not to get the pie filling on top of the batter, (it also pushes the filling outward). It takes some time. I have made it several times with good results.

recipe was not explicit enough .batter was so dense,that the cake was atotal waste and disaster.all ingredients used went into the garbage.directions should be upgraded

I would mention that flour should be added gradually, in small amounts. I have not tried this recipe, but do hope to do so very soon !
