What do you get when you include layers of chili in your lasagna? You get a combination Mexican-Italian recipe for Chili Lasagna! Our Chili Lasagna is hearty, flavorful, and a real stand-out. 

What You'll Need

  • 9 lasagna noodles
  • 1 (15-ounce) container ricotta cheese
  • 3 cups (12 ounces) shredded Cheddar cheese, divided
  • 3 scallions (green onions), thinly sliced, divided
  • 1 (8-1/2-ounce) can whole-kernel corn, drained
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 (15-ounce) cans no-bean chili

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
     
  2. Cook lasagna noodles according to package directions; drain.
     
  3. Meanwhile, in a medium bowl, combine ricotta cheese, 2 cups Cheddar cheese, 2 sliced scallions, the corn, egg, salt, and pepper; mix well.
     
  4. Spread 3/4 cup chili over bottom of baking dish. Place 3 lasagna noodles over chili. Place half of ricotta mixture evenly over noodles then top with half of remaining chili. Place 3 noodles over chili then top with remaining cheese mixture. Place remaining noodles over cheese mixture then top with remaining chili. Sprinkle remaining 1 cup Cheddar cheese over top. Cover tightly with aluminum foil.
     
  5. Bake 30 to 35 minutes, or until heated through and bubbly. Remove foil and bake 5 more minutes. Remove from oven and sprinkle with remaining sliced scallion. Let sit 5 minutes before serving.

  • Have some leftover chili you'd like to use for this recipe? Go ahead! It's fun to try different chili's in this recipe for Chili Lasagna. 
  • For a spicier dish, add some hot pepper sauce and/or chili powder to the canned chili before assembling the lasagna.

This sounds yummy...I've been wanting to make lasagna but am kinda bored with the traditional way of making it. This is a great way to spice things up, but I'm not a fan of corn so I'm thinking of adding a colorful mix of bell peppers would be nice!

I have never tried lasagna made this way and I am not sure if I would like it or not, since it seems like Mexican and Italian mixed. But, I think it looks good and I like everything that is used in it, so I will probably try it at some point.

I make red lasagna, white lasagna, veggie lasagna, and now I can add chili lasagna to my recipes! I use the no preboil needed lasagna noodles all the time, and they're good and makes making lasagna even easier. The easier it is, the more often we can enjoy it!

I made this following the recipe, then again substituting nacho flavored chips for the pasta, both were DELICIOUS! Thanks

I think you could use flour tortillas.... I also use flour tortillas when I make chicken and dumplings. They are made with flour, shortening and water just like the homemade dumplings so why not? Saves time and make you look good in the process.

I made this and it was a hit.... Didn't need to change a thing. I will definately make it again...the Mr food kitchen is genius!!!!

Looks really good. I wonder how it would work with flour tortillas instead of lasagne noodles.

This is delicious !! Didn't use the entire 2 cans of chili though. Be sure to drain the lasagna noodles well. I was in a hurry & didn't, so mine turned out a little too juicy. Don't omit the green onions .. they MAKE the recipe.

i made this dish tonight and it was fabulous! i did add some garlic salt and garlic powder to it and i like beans so i used the chili with beans..very good!

I just finish making this lasagna, I maked some home maked chili with different beans annd used some tomatoes i had cooked.I can't wait to taste it.Exspecting company tomorrow.so I have to wait Thank you for your recipes. I love cooking and adding personal touch.
