What You'll Need

  • 1 tablespoon vegetable oil
  • 1 green bell pepper, cut into 1/2-inch chunks
  • 1/2 cup chopped onion
  • 1 pound ground beef
  • 1 (15-ounce) can tomato sauce
  • 2 cups cooked rice
  • 3/4 cup mozzarella cheese, divided
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. Preheat oven to 350 degrees F. Coat a 2-quart baking dish with cooking spray.
  2. In a large skillet over medium-high heat, heat oil until hot; saute green pepper and onion 4 to 5 minutes, or just until veggies start to soften. Add ground beef and cook 6 to 8 minutes more, or until no pink remains in the beef. Drain liquid from skillet.
  3. Add tomato sauce, rice, 1/4 cup mozzarella cheese, the Italian seasoning, garlic, salt, and pepper; mix well. Spoon into baking dish and cover with aluminum foil.
  4. Bake 25 minutes, remove foil, and sprinkle with remaining cheese. Bake 5 additional minutes, or until cheese is melted.

Yes this looks delicious I love stuff peppers. I do have a question. What kind or type of rice do you use? Thanks for any help you can give me. )

This is good! I haven't been stuffing peppers for years and this a good alternative to what I usually make. I made this as written except instead of cooking the rice separately, I added 2 cups raw rice (long grain, not minute rice) and 3 cups water letting Ietting it simmer on the stovetop till the rice was tender. I did add an additional 1/2 cup of water. I make a lot of casseroles on the stovetop and save washing another dish and heating the oven.

My garden will be bursting with green peppers soon, so I'm collecting recipes to be prepared for the crop. I have a similar stuffed pepper recipe that I make in my slow cooker that's a family favorite. This dinner is delicious. I love the Italian taste and the ease of making this dish.

I love this! I don't like having whole stuffed peppers, and this seems like the best way to get the taste without actually stuffing the peppers!

Oh my goodness. What a great idea! I don't make stuffed peppers b/c of the extra time to stuff and bake. Plus going to try some of the alternatives presented by others like chicken and sausage. Thx

this came out great no matter what you use ground beef or ground chicken (I used chicken this time)

The whole family liked this recipe. I used ground turkey has a healthier alternative. I doubled the recipe.

Going to use Italian sausage instead of ground beef

We are going to make this recipe tonight and enjoy it!!!!!It looks GREAT!!!!!!And I bet it taste great as it looks great!!!!!!!

"I like the casserole better than stuffing individual bell peppers because bell peppers can be large and that can be a large serving in more than what someone wants. I found that this dish gets eaten up very quickly at potlucks. There's usually a lot of sides at potlucks that are left over and not enough main dishes so this is one that I like to make sure everybody gets some warm comfort food with me if that's what they want.
