Fourth of July Cookies

Stars and stripes may be forever, but these Fourth of July Cookies won't last long at all. That's cause they taste dynamite!
What You'll Need
- 1 (18.5 ounce) package white cake mix
- 2 eggs
- 1/3 cup vegetable oil
- 1/4 cup crushed red-hot cinnamon candies (see Note)
- 3 to 4 tablespoons (from a 4-serving size box) blueberry gelatin
What to Do

Preheat oven to 350 degrees F. Coat cookie sheets with cooking spray

In a large bowl, combine cake mix, eggs, and oil. Stir in crushed cinnamon candies. Drop dough by teaspoonfuls onto prepared cookie sheets. Sprinkle tops of cookies with gelatin. Bake 8 to 10 minutes or until light golden.
- Remove from cookie sheets to a wire rack to cool.
Notes
To crush the cinnamon candies, place them in a plastic bag on a cutting board and roll firmly with a rolling pin.

I absolutely could not crush the red hots with a rolling pin! And I don't have a food processor. I finally decided to try my blender using the "ice crush" mode, and it worked perfectly! Love the end result. They are pretty and taste really good!

A fun way to make a 4th of July dessert that looks festive and uses simple ingredients. I love to make cake mix cookies because I can buy cake mixes for a dollar and the recipes always turn out great. I'm glad I found this recipe today, so I can bake these next week.
