Lemon Crisps

Four ingredients are all it takes to whip up these crispy cookies! And thanks to the lemon cake mix, we have a nice lemony flavor without squeezing fresh lemons.

What You'll Need

  • 1 (18.25-ounce) package lemon cake mix with pudding
  • 1 cup crisp rice cereal
  • 1/2 cup butter, melted
  • 1 large egg

What to Do

  1. Preheat the oven to 350 degrees. Combine all ingredients, stirring mixture well.
  2. Shape dough into 1-inch balls; place about 2-inches apart on ungreased baking sheets.
  3. Bake 9 minutes or until edges are golden. Cool on baking sheets 1 minute; transfer to wire racks to cool completely.

Very easy for the grandkids to help with. As others have said, add some lemon extract for lemon juice.

I used the cake mix with the pudding added 1 beaten egg 11/2 tablespoons fresh lemon juice and grated rind of one lemon Delicious!

I used lemon cake mix without the pudding and also canola oil instead of butter. They turned out very nicely

I used lemon cake mix without the pudding, added 2 eggs and a tablespoon of lemon juice - fantastic! Lots of compliments

Cooked and added a small amount of vanilla icing and it was great!

This is the first Mr. Food recipe that I made and did not like. These were lemon tasting but were too hard and dry to eat. Seemed to be missing something.

Then why the 5 stars???
