Tutu's Hawaiian Cookies

Did you know that "tutu" is one way of saying "grandma" in Hawaiian? These cookies were inspired by some of Hawaii's most popular flavors: pineapple and coconut. Bake them up for a delicious cookie that'll impress Tutu...and everyone else!

What You'll Need

  • 3/4 cup shortening
  • 1 1/4 cups granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup crushed pineapple, well drained
  • 1/2 cup shredded coconut, finely chopped

What to Do

  1. Preheat oven to 350 degrees F.
  2. In a large bowl with an electric mixer, combine shortening, sugar, vanilla, and almond extract; mix well. Add egg and continue mixing until mixture is fluffy. Set aside.
  3. In a large bowl, combine flour, baking powder, and salt. Add flour mixture to shortening mixture; mix well. Stir in pineapple.
  4. Drop by teaspoonfuls 2-inches apart onto an ungreased baking sheet. Sprinkle evenly with coconut. Bake for 15 to 20 minutes or until lightly browned.

One word... YUM! Normally I wouldn't make a cookie with crushed pineapple in it, but these ones caught my eye. I'm glad I did because they are absolutely delicious!
