Crazy Carrot Salad

We're betting everyone will go crazy over this fun shredded carrot salad that has plump raisins in every bite. Crazy Carrot Salad might just be the perfect go-along for your grilled or picnic favorites.

What You'll Need

  • 6 medium carrots (about 1 pound), shredded
  • 1/2 cup raisins
  • 3/4 cup mayonnaise
  • 1 teaspoon sugar
  • 1 small head lettuce, shredded

What to Do

  1. In a large bowl, combine all ingredients except lettuce; mix well.
     
  2. Place lettuce on a platter and spoon carrot mixture over the top.
     
  3. Serve immediately, or chill until ready to serve.

Note

For a contemporary twist on traditional carrot salad, you might want to substitute sweetened dried cranberries for the raisins and baby spinach for the lettuce. Make it your own!

I think I'll like the salad and it's a way to get more carrots into my diet. There are some good suggestions here so I think I'm going to make the original version and use half of the carrots for Grandma Jan's Olive version.

For a really yummy and different sweet and salty variation, try substituting salad (green) olives for the raisins. (Omit the sugar) My Mother made it that way for years - from back in the 1940's.

Sorry-I meant to say use the pineapple in place of shredded lettuce.

An alternative version that everyone seems to like when I make it is to use a cup or two of drained crushed pineapple
