Cucumber Crab Salad

Who knew that cucumber and crab could work so well together! This would be a great new dish to bring to your next potluck event.

What You'll Need

  • 1/2 cup sugar
  • 1/2 cup white wine vinegar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cucumbers, thinly sliced
  • 2 celery ribs, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup fresh lump crabmeat, drained (see note)
  • 4 tomatoes, sliced

What to Do

  1. Whisk together first 5 ingredients in a medium bowl. Add cucumbers and next 3 ingredients, and toss well. Serve over tomato slices.

Notes

A 6-ounce can of drained crabmeat can be substituted for the fresh. To make the canned taste fresher, soak it in ice water for 10 minutes, drain, and pat dry.

If using canned crabmeat, a better choice than ice water is to soak it in milk for 20 minutes (got this from Cook's Illustrated). This will make the crabmeat taste and smell fresher.
