You're gonna want to dive into this macaroni salad! Our Hawaiian Macaroni salad is bursting with tropical flavor, thanks to the addition of pineapple and carrot. And, since this macaroni salad recipe features chunks of ham, it's filling enough to eat on its own!

What You'll Need

  • 8 ounces elbow macaroni, prepared according to package directions and rinsed in cold water
  • 1 (20-ounce) can pineapple chunks, drained, with 1/4 cup liquid reserved
  • 2 cups cubed cooked ham
  • 1/2 cup shredded carrot
  • 2 scallions, thinly sliced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

What to Do

  1. In a large bowl, combine macaroni, pineapple chunks, ham, carrots, and scallions; set aside.
  2. In a small bowl, whisk reserved liquid, the mayonnaise, sour cream, vinegar, sugar, and salt. Pour over pasta mixture and mix until evenly coated. Serve or chill until ready to serve.

This sounds awesome but I don't do Ham so I'm subbing chicken breast for it. I need suggestions tho I'm also not a fan of mayo and could use replacement the only thing coming to mind is ranch dressing but not sure...Any ideas?

This was very good but made way more than a family of five can eat. Next time I will be making half the recipe.

I grew up in Hawaii - I ran a catering company for many years- this looks like a good macaroni salad recipe and it may be tropical inspired but please do not say this is hawaiian macaroni salad- there is a traditional macaroni salad that is native to Hawaii- comes with every plate lunch special and is served at every family potluck and luau- you might want to rename this one .

Kelly 1969 - This sounds like a good recipe and I will be making this and calling it Hawaiian Macaroni Salad unless I know what a true Hawaiian Macaroni Salad has in it. Give the true salad recipe to us.

I have a friend who is from Hawaii. She makes macaroni salad like she grew up with all the time. You cook 1 pound of macaroni until it is soft and fat. Stir in 1/4 cup grated onion and this is important it must be grated not minced or chopped. The more mayo the better. She adds 2 1/2 cups mayo. Then you can add in grated carrots, hard-boiled eggs, celery or pickle relish. No hard rules here. Then add salt and pepper to taste and refrigerate. That is what an Hawaiian plate lunch macaroni salad is.
