Marinated with the flavors that you love in a salad, Mr. Food's Favorite Chopped Salad, will soon be yours too. Mr. Food loved chopped salads so much that he would often make double batches of this recipe on the weekends to share!

What You'll Need

  • 2 cucumbers, peeled, seeded, and diced
  • 2 green peppers, diced
  • 3 tomatoes, seeded and diced
  • 1/4 cup chopped onion
  • 1 (2-1/4-ounce) can sliced black olives, drained
  • 1/3 cup olive oil
  • 3 tablespoons lemon juice
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 teaspoons white vinegar

What to Do

  1. In a large bowl, combine the cucumbers, green peppers, tomatoes, onion, and olives.
  2. In a small bowl, combine olive oil, lemon juice, salt, black pepper, and vinegar. Pour over vegetables and stir to coat. Refrigerate 1 hour, or until ready to serve.

Over the years I have read a good number of chpped salad recipes have been served a number. None of them excited my tastebuds. This, even though I have not made it yet I know I shall love. Why, because, Art combined some of my most favorite foods to make this salad. I could eat this several times a week quite happily. Leave it you folks to come up with another winner.
