What You'll Need

  • 1/4 cup plus 2 tablespoons olive oil, divided
  • 1/2 teaspoon garlic powder
  • 10 (1-inch-thick) slices Italian bread, cut into 1-inch cubes
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cubed salami
  • 1 cup cubed provolone cheese
  • 6 plum tomatoes, chopped
  • 1/2 cup chopped red onions
  • 1/4 cup chopped fresh basil or 1 teaspoon dried basil
  • 2 tablespoons chopped fresh oregano or 1 teaspoon dried oregano

What to Do

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine 1/4 cup olive oil and garlic powder. Add bread cubes and toss until evenly coated. Place on baking sheet.
  3. Bake 15 to 20 minutes, or until crispy and golden brown.
  4. In a small bowl, whisk together remaining olive oil, balsamic vinegar, salt, and pepper until well blended.
  5. In a large bowl, combine bread cubes and remaining ingredients. Add dressing; toss gently. Let stand 20 minutes before serving.
