Decked Out Pancakes

Decked-Out Pancakes are the best part of relaxing weekend mornings. Load yours up with fruit for extra taste, color, and nutrition.
What You'll Need
- 1 1/2 cups maple syrup
- 2 tablespoons butter
- 3/4 cup chopped walnuts, divided
- 2 cups baking mix
- 1 cup club soda
- 2 eggs
- 1 tablespoon vanilla extract
- 1 large banana, peeled and chopped
What to Do

In a small saucepan over low heat, combine the syrup, butter, and 1/4 cup walnuts; mix well, and simmer until warmed through.

Meanwhile, in a large bowl, combine the baking mix, club soda, and eggs; whisk until smooth. Stir in vanilla, banana, and remaining walnuts.
- Pour 1/4-cupfuls onto a hot greased griddle or skillet, and cook for 2 to 3 minutes, until the edges are dry and the pancakes start to bubble. Turn pancakes, and cook 2 to 3 more minutes, or until golden. Serve topped with the warm sauce.
