What You'll Need
- 1/2 pound cooked spaghetti
- 2 tablespoons olive oil or melted butter
- 2 large eggs, well beaten
- 1/2 cup plus 2 tablespoons grated Parmesan cheese, divided
- 1 cup ricotta cheese
- 1 cup spaghetti sauce
- 1/4 cup sliced pepperoni, about 20 slices
- 1/2 cup (2 ounces) shredded mozzarella cheese
What to Do
-
Preheat oven to 350 degrees F. Coat a 10-inch pie plate with cooking spray.
-
In a large bowl, toss spaghetti with olive oil. In a small bowl, combine eggs and 1/2 cup Parmesan cheese. Stir into spaghetti then pour into prepared pie plate, and form into a "crust." Spread ricotta evenly over crust, but not quite to edge.Top with spaghetti sauce and pepperoni slices.
-
Bake uncovered 25 minutes, then top with mozzarella; bake 5 more minutes, or until cheese melts.
- Remove from oven and sprinkle with remaining Parmesan cheese. Cool 10 minutes before slicing into wedges.

I added green pepper strips and a bit more pepperoni. We really enjoyed this. By the way, this warms up well in the microwave.

I would like to make this but in a larger size since my family of five come back for seconds of any pasta dish! Do you think using a 9x13 glass with the ingredients doubled would work?

For some reason, when I try to print a recipe it blocks directions. I don't have this problem anywhere else, can you help?

Made this for dinner last night. Didn't have any good Parmesan on hand, so I used Pecorino Romano instead. Added a pinch or two dried Italian herbs to egg-and-cheese mixture, and also to the sauce, which was leftover marinara resurrected from the freezer. Had half a red bell pepper, so chopped that and added to the sauce; it added some interesting texture chunks and flavor bursts. I didn't measure, but suspect that I used somewhat more pepperoni than called for. But we love pepperoni here! I made a mistake and added the shredded mozzarella before putting it in the oven, rather than the last few minutes, but the dish turned out just perfect! Very tasty! Like a lot of recipes, this one is sort of a blank slate that you can make so many of your own modifications to, with great results! Thaks, Mr. Food!
