What You'll Need

  • 1 pound elbow macaroni, cooked according to package directions
  • 1/2 stick butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups milk
  • 1 (8-ounce) block sharp cheddar cheese, shredded
  • 1 (8-ounce) block Monterey Jack cheese, shredded
  •
  • TOPPING
  • 4 slices bacon, cooked and crumbled
  • 2 scallions, sliced
  • Sour cream for garnish

What to Do

  1. Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. Drain and rinse macaroni then return to pot. In a large saucepan over medium heat, melt butter. Add flour, dry mustard, salt, and pepper. Cook 3 to 5 minutes or until mixture begins to turn golden, stirring constantly.
