This recipe was created totally by accident. A viewer told us he had just finished cooking pork chops and was carrying the pan over to the kitchen counter. Well, his wife had just opened a can of peaches for a fruit salad she was making and...crash! You guessed it - they had pork chops smothered in peaches. Instead of tossing the meal into the garbage, they shrugged their shoulders and dug in. Yum, what a taste! we're sure you'll agree that this dish is no accident.

What You'll Need

  • 4 pork loin chops (1 to 2 pounds total), about 1 inch thick
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 (15-1/2 ounce) can sliced peaches in heavy syrup
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground ginger
  • 4 cups hot cooked rice

What to Do

  1. Season both sides of pork chops with salt and pepper.
     
  2. Heat oil in a large skillet over medium-high heat and brown pork chops 3 to 4 minutes per side. Stir in remaining ingredients except rice.
     
  3. Reduce heat to medium and simmer 15 to 20 minutes, or until pork chops are cooked through and sauce has thickened. Serve over rice.

Made this as written and it was excellent. The pork chops were very juicy and tasted phenomenal. Will definitely make again.

I did this with a can of apple pie filling, minus the sugar, ginger vs peaches. not bad
