Potatoes O'Brien

We use frozen diced potatoes in this easy dinner side dish, and no one ever knows. Potatoes O'Brien tastes so homemade, without all the work!
 

What You'll Need

  • 6 tablespoons butter or margarine, divided
  • 1 medium-sized onion, diced (about 1 cup)
  • 1 large bell pepper, diced (about 1 cup)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bag (32 ounces) frozen diced potatoes, thawed
  • Paprika for sprinkling

What to Do

  1. Preheat the oven to 375 degree F.

  2. Melt 2 tablespoons butter in a medium-sized skillet over medium-high heat. Sauté the onions and bell pepper for 8 to 10 minutes, or until wilted. Melt the remaining butter and place in a large bowl. Mix in the salt and black pepper, add the potatoes, and toss. Add the onions and bell pepper and stir until thoroughly mixed.

  3. Pour into a 9" x 13" glass baking dish and sprinkle the top with paprika. Bake, covered, for 15 minutes. Uncover and bake for 15 more minutes.

Notes

This is best when served immediately, but you can refrigerate any leftovers and still enjoy them a second time!

do the potatoes need to be thawed or used frozen?

I would imagine thawed bc the seasonings won't stick as well when frozen.

The potatoes should be thawed :)
