What You'll Need
- 1 1/2 pounds sweet potatoes (about 3 medium-size)
- Cooking spray
- 1/2 teaspoon seasoned salt
What to Do
- Pierce sweet potatoes several times with a fork. Place on a microwave-safe plate; cover with damp paper towels. Microwave at HIGH 8 to 10 minutes or until tender. Let stand 5 minutes. Peel and cut potatoes in half lengthwise. Cut into 1/2-inch strips. Coat evenly with cooking spray, and sprinkle evenly with salt.
- Coat cold grill rack with cooking spray. Preheat grill to medium-high heat. Grill potatoes, covered, 1 to 2 minutes on each side or until grill marks appear on fries.
Don't feel like turning on the grill? No problem! This recipe works great on a grill pan on top of the stove!
