The Other Baked Potato

Try adding smoked turkey instead of the bacon, or maybe add some diced smoked cheese. Our favorite way is to sprinkle on some chili powder or a few tablespoons of tomato sauce. They'll probably accuse you of stealing some fancy restaurant's recipe, but so what! You'll know the truth.

What You'll Need

  • 4 or 5 potatoes, peeled and diced
  • 1 onion, chopped
  • 3 slices cooked bacon, chopped
  • 1/4 cup white vinegar
  • 1/4 cup light molasses
  • 1/4 cup firmly packed brown sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon salt

What to Do

  1. Preheat oven to 400 degrees F.
     
  2. Combine all ingredients in a large bowl and toss gently to mix. Put into a greased 2-quart casserole dish
     
  3. Bake, covered, about 1 hour or until potatoes are tender.
     

Notes

You can cook the potatoes uncovered for an additional 10 minutes to give them a nice brown crust.
